About Me

Hello! My name is Liz. I am a 22-year-old lactose intolerant vegetarian, and I have a love affair with cupcakes.

I love cupcakes. In all shapes, sizes, and colors. I got my bachelor’s degree in Baking and Pastry Arts from Johnson & Wales University in Providence, RI, so I love to bake. Enough to one day make a career out of it.

I recently graduated from college, and am living in Fargo, North Dakota while i’m searching for a job.

This blog won’t necessarily be all cupcakes all the time, so you may be wondering, why the ‘It’s a Cupcake World’ blog title? I feel like we should all live in a cupcake world. Cupcakes are happy, colorful, delicious, and they bring back the childhood in all of us. Who wouldn’t want to live in that world?

This blog will take you on the roller coaster that is my life, and in it I will showcase my crazy cupcake ideas, (Most of them dairy free and even a few vegan ones) other baked goods, and some of my vegetarian recipes will squeeze in there along the way, I’m sure.

So thank you for taking the time to read about my blog, I hope you enjoy it!

    Hey Liz! It’s not dorky at all that you found my blog and read all the way through all my 105 posts 😛 I’ve done that more than a few times myself with other blogs! I’m thrilled you enjoyed them all so much – thanks for reading.

    I think it’s so badass that you’re certified in pastry! That’s a path I considered pursuing myself. I can only imagine all the delicious cupcake possibilities that lie in your future… 😉

        Ooh, you should! Or if not cupcakes, at least brownies. They’re too easy – pulse 1 cup each pecans and walnuts into a powder in a food processor, then while it’s running, add 1 cup of dates, one date at a time. Process until a loose dough forms, then stop and sprinkle on 1/4 to 1/2 cup cacao or cocoa powder (to taste; I use just over 1/4), then pulse till combined. Press into a pan and refrigerate – voila!

        Sorry, but I just made those tonight and I’m in love with them, so I HAD to share them with someone! 🙂
